After I had been dreaming about a Vitamix for several months, my sister Ann sent me an enticing Black Friday offer (day after Thanksgiving) that I couldn’t resist.
I ordered my Vitamix, direct from the factory in Cleveland.
It arrived with an overwhelming set of materials: cookbook, DVD, lid with a plunger,
and separate container for grinding grains.
After getting up the courage to wash it and dry it out, after
watching the DVD, I was ready.
This week a recipe on a blog I subscribe to caught my eye.
It was for a green drink that had greens, fruit, avocado, and touch of hot pepper. I was intrigued. I adapted it as shown below, adding some cucumber, using lime instead of lemon juice, and adding a teaspoon of Nopal powder from the Mexican cactus that gives some added fiber as well as an additional citrus tang.
When I tasted the creamy green drink my taste buds sang with joy. The mix of tangy, creamy and spicy works very well together. I licked my lips with pleasure.
Not a bid way to start off one’s day! Here is the recipe: Sweet Citrus Avocado Dreamboat - citrus, avocado, apple and greens
1 large Satsuma tangerine
1 cup kale or spinach
2-inch piece of seedless English cucumber
2 springs of parsley
1/2 ripe avocado
1/2-cup apple, chopped
1 cup coconut water or water, chilled
1/2-cup ice
1 Tbsp lemon or lime juice
dash cayenne
1 tsp Nopal (cactus powder, optional)
Combine in blender or Vitamix and puree until smooth. Serves 1- 2. Drink and enjoy! Adapted from the Healthy Happy Life blog.
