It happens to be vegan: no egg, butter or honey. I could not stop eating the dough as I dropped spoonfuls on the cookie sheet. These are even better than peanut butter cookies (my former love.)Recipe
2/3 cup maple-almond butter (or ½ cup almond butter and ½ cup maple syrup, well-blended)
1/4 cup agave nectar
3 tablespoons coconut oil
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped almonds
1/3 cup golden raisins
Preheat the oven to 350F.
1. In a large bowl, combine the maple-almond butter, agave nectar, coconut oil and vanilla.
2. In a separate bowl, mix together the whole-wheat pastry flour, baking soda and salt.
3. Add dry ingredients to wet ingredients, along with chopped almonds and raisins, and stir until just combined.
4. Drop heaping tablespoons of dough onto cookie sheet.
5. Bake for 8-10 minutes.
